Cool as a cucumber! So they say... and with good reason, with a water content of nearly 95%, it's easy to see why cucumbers have a great deal of cooling properties, and a cooling cucumber riata has rescued many a person from an overly hot curry.

There are three main types of cucumbers which are generally available: field cucumbers which are generally the widest type with dark, thick green skins; Continental cucumbers which are long and thinner with a light, thin skin and Lebanese Cucumbers which are small with a thin, light skin. Generally Continental (or telegraph) and Lebanese cucumbers are grown in hothouses while field cucumbers are grown outside.

These Mediterranean vegetables are a key component of many of our favourite summer salads, and let's not forget the time honoured tradition of cucumber sandwiches at high tea!
